Skillet Gnocchi - Easy Recipe for Moms

Moms have zero time. With our days already jammed packed with raising children there is little time to grocery shop, meal prep, and cook a nutritional meal. I am thrilled I recently discovered this skillet gnocchi by Olivieri. Kids love pasta, and moms love nutritional food in their bellies. This easy recipe is perfect for moms as it has added protein and vegetables, got to sneak those in where we can. It’s also the perfect portion for an entire family! Oh and I should mention, only one skillet to clean up afterwards means less dishes!

Growing up in an Italian household, pasta was always a staple meal enjoyed multiple times a week. Some of my fondest memories are the laughs we shared at our dinner table over a hardy bowl of pasta. Gnocchi was always a special treat as either my Nonna would make it from scratch or we would devour it at our favourite restaurant. This Skillet Gnocchi by Olivieri makes it easy to enjoy without the work.

Ingredients:

  • 1 family size Olivieri Skillet Gnocchi or two regular sized bags.

  • 1 lemon

  • Garlic

  • 6 medium sized mushrooms

  • Small pack of cherry tomatoes

  • 1/2 cup freshly grated parmesan cheese

  • Handful of green onion

  • Handful of fresh parsley

  • 3 egg yolks

  • 1/2 cup milk or half-and-half cream

  • Salt & Pepper

  • 1 tablespoon of butter or oil for the pan

Instructions:

1) Start by washing your vegetables! This hands down is the most important step.
2) Cut your mushrooms in slices, your cherry tomatoes in halves, and chop your green onion & garlic.
3) Zest your lemon - we are only using the zest.
4) Add some butter or oil into your skillet and cook the garlic and mushrooms first for 3-4 minutes on medium heat.
5) While that cooks, beat 3 egg yolks with 1/2 cup of milk, lemon zest, and most of the parmesan cheese (leaving some cheese to top at the end).
6) When the mushrooms are cooked add in your gnocchi, tomatoes, green onion and let that cook for another 3-4 minutes.
7) Beat the egg sauce a little more and pour it over top of the gnocchi, constantly stirring them.
8) Add salt and pepper to taste and cook for another 5 minutes.

Dish up and top with remainder parmesan cheese and fresh parsley and you are ready to enjoy this delicious skillet gnocchi with your family!
